Since 1977, we’ve been working to show the importance of food to health and happiness. Based on scientific research, our team has chosen to integrate principles aimed at offering a caring gastronomic experience, without sacrificing taste or pleasure.

Customers enjoy 3 invigorating menus a day. Its six-course selection includes surprising vegetarian experiences, delicious meat and fish dishes.
Breakfast
Morning sweet tooths will love the Buckwheat Galette with caramelized apples, vanilla coconut cream, and toasted almonds, while savory types will love the Avocado Toast with salmon gravlax, cashew cheese, and cherry tomatoes.

Lunch
After a morning of connecting with nature and pampering oneself, happiness returns to the restaurant. Whether in the magnificent dining room or on the heavenly terrace with its breathtaking view of Mont Orford, customers can once again discover dishes just as tasty as in the morning. The tenderness of the poultry and meat dishes (such as the succulent Cajun-spiced beef flank steak on squash, and celeriac purée), the freshness of the fish and seafood and the richness of the vegetarian dishes appeal to the finest gourmets.
Dinner
The evening ends on a high note with the evening menu. Six colorful dishes and a chef’s inspiration conclude the gastronomic experience. Choices include Jumbo Shrimp marinated on a shellfish bisque with cashew cream, brown rice noodles, vegetable tagliatelle, raw oil flavored with paprika and dill. For vegetarians, there’s Tandoori-style roasted cauliflower with button mushrooms, acorn squash and pesto.

Our kitchen is run by chef and nutritherapist Jean-Marc Enderlin, who also specializes in living and hypotoxic cuisine. A graduate of the Centre Européen pour la Recherche, le Développement et l’Enseignement de la Nutrithérapie at the University of Brussels, Jean-Marc has had the good fortune to work in restaurants around the world, including Switzerland, the UK, South Africa, Greece and Belgium. He was kitchen manager at the famous Restaurant TAN in Brussels before moving to Eastman in 2012. For the past 10 years, he has put his knowledge and experience at the service of the restaurant’s mission: to create cuisine that is as gourmet as it is healthy.

The principles that unite pleasure & health
La Cuisine Tonique is the result of many years of research and experimentation and is based on the research of doctors Jean Seignalet, Barry Sears, and Thomas Seyfreid. Its principles include the use of quality foods and the promotion of healthy products – usually organic, non-genetically modified, locally produced, and in season. In addition, this cuisine pays particular attention to food combinations so that each dish offers a low-sugar diet, with a good intake of healthy fats and fiber. Meat, fish, and poultry are cooked at low temperatures, which eliminates the glycotoxins responsible for inflammation in many people. Gluten and dairy proteins are deliberately excluded, in favor of other cereals and flours such as millet, buckwheat, brown rice and gourd, nut, coconut, and soy milks, as well as lacto-ferments (such as sauerkraut and kimchi), sprouts and germinations.
